You can draw any line or shape you can think of with the Pen Tool. It allows you to add anchor points to existing paths, remove anchor points from existing paths, and create new anchor points.
It appears that you have the dreaded "rubber band" option enabled. Uncheck "Enable rubber band for" the Pen tool in Illustrator's Preferences, under the "Selection and Display Anchor" options.
