When you unpivot, you unpack the attribute-value pairs that constitute the new columns' intersection points and re-orient them into flattened columns as follows: Values are unpivoted into a new column (in blue on the left) (in blue on the right).
Replace values does not pick up new columns when they are introduced to the table, therefore the unpivot removes the rows with null values from the new column.
